Roasted Cherry Tomatoes with Store Bought Ravioli
This is one of my favorite recipes. It's simple, versatile, and tastes great. And, my boys will eat it. This is a great way to use up that big container of cherry tomatoes that I always buy at Costco or Sams Club, that rarely gets used up... If you don't have ravioli, any pasta pairs well with this recipe.
Ingredients:
1 large or 2 Medium packages of cherry tomatoes
2 medium onions (one is fine if you prefer that)
3 cloves of garlic crushed and chopped
¼ cup olive oil
1 teaspoon kosher salt (you can add less, the recipe is forgiving)
½ teaspoon black pepper (10 - 15 twists on a pepper grinder)
1 teaspoon Italian seasoning
White wine (anything you would drink - I used Moscato from Aldi) for deglazing
1 package of ravioli (I used 1 large package from Costco)
Freshly grated parmesan cheese to taste (I used Costco’s Red Wine Parmesan)
Directions:
Preheat your oven to 425℉. Start your water for the ravioli - get it boiling. While that’s beginning to boil, slice cherry tomatoes into halves and add to your roasting pan. Chop your onions and place into your roasting pan - feel free to use a food processor for the onions if you have one. Peel, crush, and chop garlic (you can also put the garlic through your garlic press-much easier than what I did on the video) and add to your roasting pan. Toss those ingredients with your olive oil. Add salt, pepper, and Italian seasoning, and toss the ingredients ingredients with your olive oil. Place the roaster into your oven and cook for 20-25 minutes. Open the oven, deglaze the pan with your wine of choice. Toss the wine with the tomatoes, making sure to scrape the sides so you can get all of that deliciousness back into the dish. Grate your parmesan cheese and cook for 10 minutes more.
While the tomatoes are finishing up, start cooking the ravioli. Fresh store bought ravioli cooks quickly so this won’t take long. If you are using frozen ravioli (a totally fine ingredient to use), follow the cooking instructions on the package. Remove the tomatoes from the oven, toss, and add your raviolis to the tomatoes. You can add more cheese if you want, I always do. My husband has an obsession with basil, so we always have it in the house. I like to chop about 5-10 basil leaves and add it to the dish. Fresh oregano would be great too, but both herbs are optional. The dish is fabulous with or without the fresh herbs. Enjoy!
Notes;
If you don't have ravioli but you do have pasta, any pasta will work. And, feel free to add any and all of your favorite dried spices like oregano, thyme, or dried basil. I would do this before placing the dish into the oven so that the spices can rehydrate in the cooking process. Happy cooking!
